Chiken Curry
Ingredients
Chicken: cut up or mixed leg and thighs: 3 days x 2 people x 4 pieces = 24 pieces
Onion: finely hand diced or use food processot: 3 medium size
Garlic: finely hand diced or use food processot: 3 cloves
Ginger: grated : 1 inch
Potatoe: cut into 4 pieces: 1 medium size
Vegetable oil: 5 table spoons
Salt: 2 tea spoons Turmeric: 4 tea spoons
Preparation
Wash chicken pieces and drain. Optionally marinate overnight or less with yogurt.
Cooking
Heat oil in a pot or in a wok, medium heat. Saute potatoes partly done and take out of the pot. Saute chopped onion,garlic,ginger,turmeric in the same pot.
Put chicken pieces over the spices and stir. Don't put any salt yet, keep on occasionally stirring until the liquid dries out and some oil comes back.
Put the potatoes back in the pot and add enough water to just cover the potatoes and chicken pieces. Boil for 20 to 30 minutes until the potatoes and meat are done. Turn off the burner.
In a small bowl put 1 table spoon ghee or butter and 2 cardamom, 2 cloves,1 small piece of cinnamon, 1 bayleaf. Heat in a micro stove for 60 secs and take out and immediately pour over the meat to finish.
